It is that time of year again… There is irony in the fact that the optimal time to butcher grass-fed beef is also tax season. In the past if a customers exhausts their beef early in the season and we have beef ready for process we can accommodate, but that isn’t always the case. There are several reasons as to why butchers recommend winter butchering. First, for pasture raised grass-fed beef cows are coming off their optimal diet. Second, the cattle have not began throwing their energy into surviving winters extremes. Third, beef tastes best once it has aged. So, those steaks are going to taste better after the’ve had all spring to relax in the cooler. Frozen steaks cook better from freezer

Farming is a lifestyle. There are more things you can farm than one realizes. There are even a greater number of ways to practice farming. Farming is an art, you must finding the delicate balance to sustain and improve your operation while strengthening and supporting nature and the environment in which you farm. Farming is music, the animals moving and calling, the bees humming, the chickens clucking, and the tractors chugging cause us all to do a little jig. Some of the first sounds and words we teach our children are the sounds of a farm (The cow goes MOO).
Our family has made a choice to farm, I find it glorious, although it doesn’t provide a living. We get to work hand in hand with nature to produce what we feel are great products, raised in a nurturing environment and ethically processed.
